Almondy Apple Tart

An apple tart to pair with a crisp Cloudy Bay Sauvignon Blanc...

My favourite way to spend autumn days is in my cottage kitchen (whenever I get the chance!), cooking up a crisp apple tart to welcome in the cooler weather, accompanied by a glass of lightly chilled Sauvignon Blanc. As it gets colder outside, the kitchen becomes the heart of the house, with friends and family gathered at any opportunity, round for a cup of tea or glass of wine.

Almondy Apple Tart

 

Ingredients

Serves 8

Ready-rolled puff pastry pack

1 egg

5 apples (I like using a mixture of varieties)

1 lemon, juiced

125g ground almonds

1 tsp ground cinnamon

1/2 tsp ground cardamom 

3 tbsp light brown sugar

2 tbsp apricot jam

Method

  1. Heat the oven to 200C/Gas 6 and line a baking tray with baking parchment.

  2. Roll the puff pastry out on the sheet and score all the way around 1cm in from the edge. Beat the egg and brush over the pastry, making sure to thoroughly cover it, especially the 1cm border.

  3. Thinly slice the apples and place in a bowl with the lemon juice, mix well.

  4. Mix the ground almonds with the spices and spread over the pastry, inside the 1cm border.

  5. Arrange the apples over the middle section of the pastry and scatter the sugar generously.

  6. Cook for 35-40 minutes, until the pastry is nice and puffed and the apples are golden.

  7. Heat the apricot jam briefly and then carefully brush over the apples on the tart.

  8. Serve while warm!
